I pressured cooked a pork roast, in apple juice and Calvados. Added half a cup of raisins, and 12 allspice berries. Half way through the cooking process, I added some stuffed, Granny Smith apples. When completed, a gravy was made from the liquid left inside the pressure cooker. I made a roux, added the hot liquid, little by little, along with a quarter cup dijon mustard. A bit of heavy cream, too
Some mashed potatoes, on the side, dusted with a pinch of paprika, for color.
Parker House, rolls. Nice!

Nothing fancy tonight. A boiled egg, a couple of pieces of nitrite-and-salt-free bacon from Trader Joes and a piece of toast made from sunflower seed bread.

Marinated lamb grilled outdoors. Artichoke hearts sauteed with garlic and olive oil. Baked tomatoes. Spinach salad from a bag of it I found on the ground - not!!!

My daughter and I made a small trip to the west coast today and had dinner "on the road". I had "bakskuld" a local speciality - fish dried in the strong, salty air of the coast with rye bread and mountains of butter.
My daughter had a chicken dish of some sort.

No, Sandra . . . just for my sister and me . . . I've gotten fast, in the kitchen. And, I'm very organized. Everything gets set up, from the morning. I do little things, during the day . . . the final preparation doesn't take that long. I'm very, very good with gravies and sauces . . . deglazing, that sort of thing . . . this really helps make even an average meal, much more special
The apples, were cored and stuffed with orange zest, and walnuts. A little butter, too.
I really, really love my pressure cookers. Couldn't do, without them. I did the potatoes in there, too. Pressure cooked mashed potatoes, are EXCELLENT. They get so soft, you don't even have to add milk to them . . . just some butter and salt . . . I use chicken bouillon.

I made Szechuan stir-fried eggplant, mushrooms and green beans with pan seared tofu cubes over Jasmine rice.
That is THE BEST recipe for the eggplant "sauce" I've ever tasted. Would do great on lots of other asian veggie dishes

We're going out tonight, but last night I made chili con carne using ingredients I bought at our farmer's market, with the exception of some of the spices. I used ground turkey to make it more acceptable for Weight Watchers and by the time I got finished, you'd hardly know it wasn't made with beef.

Armanis, that dinner you made sounds so delish! I'm thinking of getting a presure cooker, now. Could cut down on cooking time:-)
For us the menu is:
Broiled wild salmon with lemon and dill.
Mozarella, Tomato and basil salad with roasted garlic bread.
Side salad of organic greens with raspberry vinagrette.
Creme caramel for dessert with a side of fruit compote. Yummmm!

Yumbo! I must try that meal suggestion. It sounds amazingly good Armanis, and I have a bottle of Calvados...
Well, I made a little ratt, of sorts. Organic zucc, heirloom tomatoes, a splash of Cab, red onion, lightly sauteed in EVOO.
Some cottage cheese, a yellow Barhi date.
Dorthea, the air there must have been so fresh and clean. Ahhh.

I brown my meats, right inside the cooker, then add the liquids, spices, wine, whatever I'm going to use. After the roast is cooked, you have a fabulous start, for a sauce or gravy. Don't be afraid of pressure cookers. I've got a Kuhn Rikon, which is the absolute best I've ever used. But my little Toastmaster is electric, and it's great, as well . . . that's what I use, for veggies. I could NEVER boil potatoes, again . . . they're so watery. Once you get used to pressure cooking veggies, I think you'll notice a difference. Roasting veggies is wonderful too, but in the summer, when it's hot . . . the pressure cooker is so much faster. Also . . . the hood above my range, is soooooooo clean! The steam from my cookers, cleans it, every time I use them!! It's immaculate. It's kind of exciting when you have guests, too . . . they hear the hissing and the steaming, and you can excuse yourself if you need to, because 'I'm watching the clock!' LOL
btw: joules, you really get into exotics!

Oh, the timing of this post is too good to be true! Tonight I made seared scallops over a bed of lentils, infused with a apple cider/apple cider vinegar reduction and topped with a mascarpone/cream/white wine/chive sauce, with broccoli rabe and chickpeas on the side.
And I'm not kidding! Do I normally, ever, EVER cook this way? Extremely rarely, but today happens to be the day I decided I would cook something out of Bon Appetit to justify my now-going-on -ten-year subscription.
Tomorrow it'll be shepherd's pie, so don't go getting all excited on me.
PS It was great. My husband and older son both loved it, but they thought there were too many lentils. Typical males.

Kosher salt and lots of pepper! Sometimes I use ground turkey.
...and I add grated cheddar to each "bundle" and I use the Texas size frozen rolls that you thaw and raise. I top each "bun" with a dot of butter and bake to golden brown.
It's a fabulous German Folk dish.
I'm not German I'm Irish but my mom used to make these and they called them Kraut Rounds.
Sort of like a Runza...Cabbage Buns...whatever! They're good! Great for cool fall weather like today!

Took friends who had never had Indian food to a good restaurant that serves Gujarati style cooking (and of course South Indian, too). We had one of everything: Mysore masala dosa, karman, bhel puri, dahi vada, sweet and salt lassis, sambhar and idlis, khaman (I love this bread) and shrikand with puris. Happy us. Afterward we shopped at the grocery nearby and I stocked up on Brooke Bond tea, PG tips, rose petal jam, pomegranate jelly, and Pear's soap. Like a visit to India, but only twenty minutes from my own comfy bed!

Dinner last night, fairly boring. I chopped up trimmings from a beef tenderloin in the food processor and made burgers. We breaded and fried julienned zucchini.
Tomorrow ~really today~ I'm making a chicken andouille sausage gumbo with a bit of okra. I enjoy making the roux very dark, almost black, and making my gumbo 'swampy.' Gumbo is chicken soup for hedonists! LOL

Karen, the recipe for the Birocks sounds almost identical to one a friend gave me years ago. She said it was Russian (from her family), and to spice it with curry/cumin or both. How fun!

Dinner last night was quite tasty:
Butterfly chicken with dijon rub grilled over a bed of thyme (this was divinely perfect, crispy skin, juicy meat, and nearly falling off the bone.)

Company for dinner. Roasted chicken with vermouth pan juice. Sauteed cherry tomatoes. Sauteed baby zucchini. Salad with walnuts and vinaigrette. Wine.
St. Andre, Kavli crackers, Hungarian roasted red pepper spread nibbles before dinner.
For dessert - ahh - the guest brought little bitty Hammentaschen. The poppyseed ones!!! I don't know if I spelled that correctly. They were superb. I LOVE poppyseeds in desserts.

It's just my husband and I left at home now. All my children are married. My husband and I go out to eat all the time now. And since we are both trying to maintain our weight, we usually bring home half our meals so when we are dining at home we are eating our left-overs. It ends up being cheaper then when I would shop for the week and cook every night ! And I have more time for myself !
