I noticed a recipe in the weekly Wegman's flyer and decided to try it. Easy and it smells and tastes wonderful.
1 to 1 1/2 lbs. baby patty pans (mixed colors is good) trimmed
1 pkg cleaned leeks (or about 3-4 leeks you clean yourself) cut in large pieces
oil
salt and pepper
The recipe called for "basting oil". I used olive oil.
Coat the bottom of a shallow baking dish with oil. Add the veggies. Drizzle more oil over them so they are lightly coated. Salt and pepper to taste. (I used fresh ground sea salt and pepper) Roast at 450 deg for 30-45 min until squash are tender.

I also roast parsnips and carrots (together). Basically the same except I leave off the salt and pepper since the roasting seems to bring out the sweetness of the roots. This is the only way I can enjoy cooked carrots - one of the few foods I hate although I love them raw.

What the heck are baby patty pans? Never heard of them.

Oh squash of some sort. Neve met one I liked. Do like carrots though, cooked or raw.
