Full Version: Red Onions Au Gratin
Perfume of Life > A Civilized Perfume Affair > Talk About The Arts
Laemco
I made this red onion dish for a family dinner over the holidays and it was absolutely delicious and simple. It's from Jamie Oliver's newest cookbook:

~~~~~~~~Red Onion au Gratin~~~~~~~~~~
4 medium red onions, peeled, quartered, and separated
Olive oil
Fresh thyme, leaves picked
A few garlic cloves, peeled and sliced
1/2 cup of white wine
4 tablespoons crème fraîche
1.75 ounces gruyère, grated
1.75 ounces parmesan, grated
Preheat the oven to 400ºF. Toss the onions in a bowl with the olive oil, thyme, and garlic. Season well, and pour into a baking dish (such as a 9” x 13” Pyrex). Pour in the wine, and cover tightly with aluminum foil. Bake 45 minutes, remove the foil, and bake 15 more minutes. Turn the oven down to 350ºF. Stir in the crème fraîche, sprinkle on the cheese, and return to the oven until it all looks browned and beautiful
It sounds rich and yummy, Laemco. What main dish or meat do you serve with it?
It does sound good. Do you know how to make your own creme fraiche? I think with either whipping cream or sour cream.
God help me.
That is going directly to my hard drive, then to my thighs.
That's just what I was thinkin.
I served it with roast beef but it could easily go with any main dish.
I wouldn't make it too often tho, it is pretty rich. Damn that Jamie Oliver!
Dang, that sounds good. Wonder how it would be with vidalia onions.
Where might one buy crème fraîche? Or do you have to make it?
Look for it in the dairy case of any fancy grocer, or Trader Joe's, or big supermarket, like Whole Foods.
Sandra, there is a French saying about a gateau- "Too seconds in the mouth and 2 years on the hips!"
