This is something I recently remembered from my childhood in India. Street vendors would grill corn and then apply a salt/pepper rub with a cut lemon. This way, you lightly squeeze the lemon as you rub it all over the ear of corn and the juice helps the salt/pepper rub stick to the corn. That's what I've been doing this summer with all the fresh corn available. I love corn but neither my arteries nor my waistline can afford to consume all that butter. This way, I get the best of all worlds: corn, lemon, salt, red pepper, black pepper, and cumin.

I like Old Bay Seasoning (I use it to boil shrimp) on mine.

I can vouch for the lemon method , never had it this way until DH did some up.
Old Bay could be a thraed of its own

When I go shopping for Jarritos soda water, I stop at the eloteras (sidewalk corn vendors) for a treat.
Elote (Mexican Corn-On-The-Cob).
3 tablespoons fat-free mayonnaise
1 tablespoon fat-free sour cream
2 teaspoons fresh lime juice
2 tablespoons finely grated Parmesan cheese
1/2 teaspoon chili powder
1/4 teaspoon ground red pepper
1/4 teaspoon ground cumin
1/8 teaspoon salt
Combine ingredients. Spread over four roasted ears of corn using the shucked husk as a handle.

I bought some fresh picked corn from my local farmers' market and tried this. I didn't have any plain cumin, so I used lemon juice and mild curry powder. This is a winner!!

I love COTC!
I'll have to try the lemon trick. But have you ever tried fresh COTC without anything on it?
When we've grown our own corn, one of my favorite treats is to get my steamer pot going, go out to the garden, break off two cobs, shuck them there in the garden, walk back to the kitchen, and steam them immediately. Then I'll eat it just the way it comes out of the pot... no butter or seasonings. Sometimes iffen I'm feeling generous, I'll give DH the 2nd cob.
Fresh sweet bare-nekkid corn is to die for!! But it must be fresh...the trick is to pick it, pluck it, and cook it before the sugars have a chance to turn to starch. YUMMY!

I am cross eyed confused?? How did corn eating jump to the arts section?
I've missed the latest craze again haven't I ? Last time it was MC Hammer pants.
Now I've missed the fad of corn eating. Somebody please help keep me posted
on current trends. I am hopeless.

try it with key lime instead of lemon, fresh squeezed orange is yummy too.
