What have you enjoyed tonight?

We're having oven-broiled shrimp and some
Creole Cheese Grits Florentine.
I'll probably dream up some other vegetable side to have as well.
With a green salad on the side and some chocolate chip cookies for dessert.

It's cleaning dribs of things out of the fridge day, so there will be tomato / mint and cilantro salad, remnants of aged cheddar, spaghetti sauce, and 1/6th of a tofu patty on 1/2 a gluten-free wrap, an orange and a chocolate pudding cup.
Enjoy the clambake, scentual!!

My hubby just had a barbeque beef sandwich. I, being the gastric bypass lady, got to have a few bites of the beef (no bread,) and a popsicle! No side dishes, or anything else, just the sandwiches (we don't do much around this house in the way of food.) Dinner is usually just one course, no sides, that's it. I know I should make more of an efffort, but I hate having to do even more dirty dishes, lol!
I do, however, enjoying reading about all the dishes that you guys cook up...

I make my garlic cheese grits (you could add shrimp or celery or whatever) with Kraft garlic cheese. It comes in a roll and is really simple.
I want to make grilled Romaine. You take a head of romaine and take off any bad leaves........then cut it length wise down the center......brush the flat side with olive oil and put it on the grill! Cook until the lettuce gets the marks on it. Then........make a salad.......with maybe balsamic vinegar. Add whatever, ......yum.

Tjen, that sounds wholesome and healthy.
I have brown rice in the cupboard but I often forget to use it. *sad*
I made a lean veal bolognese sauce, and before adding more stock and tomatoes to cook it down I spooned out a little of the veal with mirepoix, stock, toms, etc and combined it with cgopped zucchini out of the 'boats' I'd prepared. Then I stirfried the mixture with the chopped zucchini, let it cool. The I added bread crumbs, grated parmesan, herbs and placed stuffing in parboiled zucchini halves (2 or 3 per person). I baked them in a pyrex dish in the oven at 355 degrees for 35 minutes.
I added more chopped tomatoes and stock to the rest of the simmering veal bolognese sauce and let it cook on low for an hour+. I let it cool and then refrigerated it for use during the next 4 days.
My latest cooking strategy is to always prepare the basics for 3 dinners ahead during one cooking session.

OH MY GOD! I just had a friend come over to cook dinner for me at my house. We invited another friend.......who lives down the street.
We had GRILLED Romaine.......yes that's right. Romaine.......sliced in half length wise, brushed with lots of olive oil and lots of salt and pepper. We put it on the grill sliced side down..........with the cover down on the grill ...........I cannot tell you the flavor that this Romaine had!!! You gotta try it. YOU do want the lettuce with stripes and some charred leaves.......
Then we sliced the lettuce and put it in the salad bowl with a little balsamic vinegar and some more olive oil............fresh ugly tomatoes, and shredded locatelli or parmesean reggiano cheese.......and it was Fabulous!!
Now............for the MAIN EVENT........lots of garlic in olive oil.............sauted with fresh or canned mushrooms. 1 can of anchovies sauted in the olive oil untl they disintigrate.................make sure there is lots of olive oil........do NOT scrimp..........
Cook linguine according to pkg. directions...............drain and put in the pan with the olive oil, put the pasta in the pan with the anchovies and the mushrooms!!! OH MY...............what a delicious dinner!
My girlfriend from Italy came over and made this............we are deliriously happy...........
We also made Margarita's ahead............and wine with dinner.........
Can you say HAPPY!?? Good company...........good food...........and thou..........

We ate the salad LAST!!

We had leftover tea smoked duck from a lavish Chinese restaurant feast with friends on Saturday. Last night, my husband separated skin from meat and cooked the skin to render the fat and create something akin to duck bacon. or duck cracklins. Then he sauteed onions and garlic in the rendered fat and tossed that with fettuccine, topping it off with the duck bacon. OMG that was good.
Today we're going to use the meat in duck tacos. My stomach is already growling, but that may be because it's nearly lunchtime and all I had was a chocolate Starbucks Vivanno today.

Last night, DH smoked a brisket and it was perfect, tender, moist, yummy. I didn't even put BBQ sauce on it. We paired it with some fresh, locally grown sweet corn, baked beans, and some cucumbers with sour cream and dill (from the garden!). Great summer meal.
For tonight, it will be Saturday's leftover turkey breast, shredded and made into turkey tacos by stirring in some chipotle in adobo and sour cream. I've got some tomatoes from our garden (finally!) that I'll make into fresh salsa to go with the tacos.

I'll be having some cold chicken this evening, wild rice and probably some cold beets. (I love beets!) I've been having terrible hay fever for the past few days, and combined with the hot sticky weather, I'm really not in the mood for anything more complicated.

Went to Gerrard in TO and had some Pakora , Palaak Paneer and Reshmi Kebab with naan bread , wow , just wow.
this is not my first time eating any of this stuff , it was just extremely well prepared , it even blew my hubby away and he is one tough critic of Indo-Pak cuisine.
