Full Version: Lazy-man's Strawberry Shortcake

Recently I was visiting my SIL and while looking in the fridge for some little dessert, I concocted the following. A box of crackers was sitting on the kitchen counter and in the fridge were fresh strawberries and a can of Redi-Whip. A spritz of Redi-Whip on a cracker and a big juicy strawberry on top and--voilą!--instant strawberry shortcake! (Of course I ate about five or six of these.)

Can you think of any quickie dishes you have assembled in a pinch?

Along the same lines , pizza on a naan , we always have cheese , we always have naan bread , ditto for tomato sauce ...easy peasy and naan is a fabulous flatbread.

My Cheap-Man's Peachy Keen Shortcake:

One no-name, hermetically sealed lemon poundcake found in the food aisle of the Dollar Tree: $1
Two cans of raspberry-flavor canned peach slices, also from the Dollar Tree: $2
One container of no-name frozen whipped topping from the Aldi's next door: 89 cents

Put slices of the cake in a serving dish - maybe 8" x 12". Drain the peaches, but leave a little juice, and arrange over the cake. Spread the frozen whipped topping over. Refrigerate. Voila, a remarkably good dessert - really! - for less than $5. (I was afraid of that mysterious poundcake, too, but it's pretty tasty for a buck.)
