This morning I could not decide how I wanted to make eggs. I was tired of scrambled, fried, omelets...so I thought I would make Huevos Rancheros!

They were a BIG HIT!

How did you express yourself through Huevos Rancheros? Did you serve them with refries and rice? Corn (yum) torillas? Hot sauce? Paint me a picture, please. I served plain scrambled eggs to DH this morning, but he is a big HR fan.

Thank you for asking! I was beginning to feel like an unwanted stepdaughter!

Usually on the weekends, I make breakfast. Normally its scrambled eggs with onions, mushrooms, garlic, red peppers, with hash browns and anything else I can find to keep it interesting & I top it all off with my favorite cheese.....muenster.

I didn't want scrambled eggs today & Mr Scents suggested fried eggs, but I didn't want that either.

So I said "I know what! Huevos Rancheros!"

They are easy to make....and you can use either tomato sauce or enchilada sauce...your choice.

chop up some onions, garlic, canned long green chiles or jalapenos, (seeded - remove the seeds), and chopped tomatoes, salt & pepper to taste.

fry them lightly in your choice of oil...you don't need much oil

in the same pan, you can then add a can of tomato sauce & warm it all up.

fry up your eggs like you normally would.

In another pan, fry or warm up your corn tortillas. I use a wee bit of oil.

once the tortillas are warmed & soft, put them on your serving plate, and top each tortilla with an egg.

then you can top your egg with shredded cheese & pour the tomato sauce mixture over it

you can also pour the tomato sauce mix over the egg & tortilla and top it all off with cheese.

Its sure to add a wee bit of sass to your morning breakfast!

You can garnish with sliced avocado, or serve with guacamole & chips.

Ginny you just gave me a hankering for the one version that gets all of the above only one eggs gets red salsa and the other gets green , I think next sunday brekkie is going to be fun.

My Dad makes terrific huevos rancheros, and his chilaquiles, mmmm.

Okay, now you've made me hungry!

Ginny there is this awesome hole in the wall tiny Mexican eatery , run by two loveley ladies who are pretty much bringing the real deal in Mexican food to this backwater. Everytime I go there I have a hard enough time choosing what I want ( I want it all dammit!) and then to further the issue , they ask which sauce I want and this sends me into a "I must have BOTH" frenzy. As you can see from the above post , this carries over into everything salsa.


I am also happy to report that this eatery is , according to ratings on Restaurantica trumping the much hallowed and posh Langdon Hall. Nice to see authentic , straighforward , well prepared simple food trumping upscale and a twee ( nothing wrong with Langdon Hall by the way , one just grows weary of it being extremely a tad overrated).

Fabulous! Thank you, Miz Ginny. That is a nice approach. I've always found the rice extraneous. Next Saturday - a memorable breakfast.

My husband forgot to thaw hamburger so we had chorizo and eggs for dinner. I dont know about huevos rancheros, but eggs (cooked any way) smothered in salsa in a tortilla is something I could eat every day.

Mmmm...chorizo. As long as you don't ponder the ingredients, it's a heavenly experience. LOL

Yeah, like how laws are made, you don't want to know about the process of making sausage-any sausage (or any law for that matter).




And now I'm hungry for chorizo and eggs!
