This one's SO good! I just finished a bowl.
Roasted Red Bell Pepper SoupPrep and Cook Time: 35 minutes
Ingredients: 3 medium sized
red bell peppers, cut into 1 inch squares2 medium
sized onions, chopped coarse4 cloves
garlic, chopped 1 medium sized
sweet potato cut into small cubes1 large
tomato, seeds removed and chopped 2½ cups vegetable broth
salt & pepper to taste
Directions: - Roast all ingredients except vegetable broth uncovered in baking pan in 400 oven, stirring occasionally until tender, about 25-30 minutes.
- Blend in batches with vegetable stock. Make sure the blender is not more than half full, and start on low. When soup is hot, it can erupt and burn you. Adjust seasoning. Reheat in soup pot and serve.
Serves 4

That recipe sounds delish! I love the roasted taste.
I made vegetable soup yesterday, so I am ready to go. I pretty much used what was in the house, which included a turnip, a rutabaga, alphabets, with okra, tomatoes, and so forth. The dog barked steadily, until I gave him some.
Off to heat it up.

I just made this one! Creamy Red Pepper Soup....got it on the Food TV channel.
Here it is. I didn't put in the marscapone cheese or the croutons because I'm "watching it"....but....

I love Trader Joe's Roasted Red Pepper and Tomato Soup so I know I'll like your recipe. The sweet potato will give it a bit more body, too.
