I am just back from Paris wher my life was transformed by macaroons. We visited Pierre Herme the macaroon artis, and Laduree the Macaroon Swoon. My favorite ones were:

Pierre Herme Isfphan, (rose and Lychee and rasperries), Caramel avec Fleur du Sel, and Vanilla olive oil sounds wierd but was delicious!!!

Ladurree: Ginger Lime, and Orange Blossom

DOES ANYONE KNOW WHERE I CAN GET THE RECIPES???????????

My sister has it and it's gorgeous. And yeah, it's in French. No sign of a translation coming out soon. If you want to order from a US bookstore, maybe Kitchen Arts and Letters in NY has it. http://www.kitchenartsandletters.com/

Pierre Herme also had a cookbook translated by Dorrie Greenspan, published by Little, Brown, if I remember correctly. Or maybe Clarkson Potter? I don't know if that one is still in print. I had it at one point, but thought the recipes were so difficult, so I gave it to my mom.

My favorite macaroon recipe, and probably the simplest is Nigella Lawson 's pisatchio macaroon recipe in HOW TO BE A DOMESTIC GODDESS. Once you figure out a basic macaroon recipe, then you can start fiddling around with the fillngs, flavorings until you make a successful knockoff.

This is so high flown. The only macaroons I ever get are the Kosher ones in the can, but, I love them.

Fancy, fancy with these French ones. (The ones you mention, all sound divine Elizabeada.)
